Hello hello hellooo,
I hope you had good weekends, respectively. This week on the friday/ saturday collection front, I’m rolling again with the deep fried, stuffed courgette flowers, they were a real hit last weekend 🙂 There’s also satay Tempeh, using the marvellous Tempeh Meades product – truly the best tempeh I have ever tasted.
Sunday roast is (as always) on again too.

Deep fried Courgette flowers stuffed with homemade vegan mozzarella
Satay Tempeh, shredded red & white cabbage with lime & sesame dressing
New potatoes tossed with olive oil, mint & coriander
Mixed baby leaf salad with tofu feta, cucumber & balsamic glaze
Chocolate & matcha cheesecake with a toasted oat and sunflower seed crust

Roast potatoes, cranberry & quinoa seed-roast, squash wedges with crispy sage, braised red cabbage, seasonal greens, maple glazed carrots*, with a beetroot & red onion gravy.
* there’s usually some roast beetroot & swede in here too 🙂
